As with the clementines, its very melting flesh is divided into quarters - the arils. These arils have a pretty pearly white colour with sweet and rather discreet aromas that oscillate between peach, pineapple and raspberry.

The mangosteen has the peculiarity of not being cooked, as soon as its fruits are exposed to too much heat, they lose all their taste, becoming insipid. This fruit is therefore eaten exclusively fresh. So you can cook it in a salad, sorbet, juice or cocktail, however if you want to make a juice or a cocktail, remember to remove the 2 or 3 seeds contained in the arils.
